One of my biggest challenges is planning meals that are healthy, low calorie, but most of all not boring. I plan the night before (most of the time), have fruit and veggies ready and always keep a small supply of chocolate for those days that I can't do without! A staple for me now is a salad I first had on Islamorada Key this past December. Healthy and low calorie, I eat this three or four times a week. Since I didn't have the exact recipe I had to wing it. Mixed greens / sliced strawberries / chopped pecans / goat cheese / red onion / drizzle balsamic (Shelley)
