Sunday Breakfast

On weekend mornings, I'm not so rushed as I am through the week, so I like to spend a bit more time to make and enjoy my breakfast.

Breakfast Melt
1 English Muffin
1 tsp Olive or Canola Oil
2 slices Back Bacon
2 Eggs
1 oz Shredded Sharp Cheddar Cheese
  • Split the English muffin and toast both halves.
  • Coat a frying pan with the oil then heat the bacon in it over a medium-high burner.
  • In the same pan (at the same time), fry two eggs either sunny side up or over easy.
  • When the muffin halves are toasted, top each one with a slice of bacon, a fried egg, then finish with the grated cheese.
  • Place the stacks under the broiler just long enough for the cheese to melt.  Watch them carefully to prevent burning.
