Breakfast Melt
1 English Muffin
1 tsp Olive or Canola Oil
2 slices Back Bacon
2 Eggs
1 oz Shredded Sharp Cheddar Cheese
- Split the English muffin and toast both halves.
- Coat a frying pan with the oil then heat the bacon in it over a medium-high burner.
- In the same pan (at the same time), fry two eggs either sunny side up or over easy.
- When the muffin halves are toasted, top each one with a slice of bacon, a fried egg, then finish with the grated cheese.
- Place the stacks under the broiler just long enough for the cheese to melt. Watch them carefully to prevent burning.
